- 1 Tbsp Smoked Paprika
- 1/2 Tbsp Garlic Powder
- 1/2 Tbsp Kosher Salt
- 1/2 Tbsp Coarse Black Pepper
- 1 Tsp & 2 Tbsp Olive Oil
- 1/2 Pack Thick-Cut Bacon
- Goat Cheese
- Mozerella Cheese, shredded
- Fresh Parmesan Cheese, shredded
- Baby Spinach, thinly sliced into strips for garnish
- Dried Oregano for garnish
- BBQ Sauce of choice (I use Bullseye Old West Hickory)
Steps to make to make Woodfire Style Pizza in the Oven
- First we make the dough the day before. In a large bowl, mix the luke warm water, sugar and yeast. Let it rest for 10 minutes or until mixture starts to bloom. Yeast will sink, then rise back up and bubble if it's good.
- Once the yeast has bloomed, add the oil, garlic powder, salt and bread flour into the bowl. Mix with a wooden spoon or your hands until mixed entirely and dough has formed.
- Spray the counter surface with cooking spray and spray your hands as well (this is to prevent sticking). Knead dough for 10 minutes. Dough is ready when you can poke the dough ball and it immediately bounces back into form. Dough should be slightly sticky.
- Lightly oil 4 medium sized bowls and cut the dough ball into 4 equal pieces. Place each dough ball into a bowl and cover all with plastic wrap. Refrigerate for 1-3 days. The longer it sits, the more air pockets will form inside. I normally only wait for 1 day.
- Now we prep the seasoning, cut all the veggies and cook the meat. You can use store bought seasoning or you can use the following: 1/2 tsp smoked Paprika, 1/2 tbsp of salt & pepper, and 1/2 tbsp garlic powder. I'm using some smoked chicken I had from my chili recipe.
- You have 3 options for cooking the chicken, BBQ, Pan Fry or Smoke. All 3 taste great and you can do what you prefer. The next 3 steps will have cooking instructions for each option.
- BBQ Option: Preheat BBQ to medium heat. Season chicken and place in BBQ for up to 30 minutes or until an internal temperature of 165°F. Flip halfway through cooking and brush with BBQ sauce when you do.
- Pan Fry Option: Cut chicken into small cubes, then season with spice mix. Mix well until all spices are incorporated. Heat a non-stick pan over medium heat. Once heated, add 1 Tbsp of olive oil and then add chicken. Towards the end, add BBQ sauce and finish.
- Smoking Option: Preheat smoker with Hickory wood/Pellets to 225°F and a high smoke. Cut chicken breasts in half horizontally and lightly coat with olive oil. Then, coat all sides with spice mix and set onto smoker. Smoke until internal temperature of 165°F and set aside to cool.
- For the BBQ and Smoker Options, shred the chicken before placing in fridge. That way it's ready for assembly.
- Finally, fry bacon until crispy and set aside to cool. Once cooled, but bacon into small pieces and place in fridge.
- Pre-shred all of your Mozerella Cheese (you'll use a full brick or about 400-500g)
- Cut red onion and Spinach into long slivers. Place in fridge. Keep all ingredients separate until assembly.
- It's the next day and now you're ready to cook. About 1.5 hours before you'll begin cooking, take your dough out and let it sit on the counter. 1 hour before you begin cooking, preheat the oven to 500°F and place your cast iron pan in. Let the cast iron pan heat for 1 hour, so it's piping hot.
- The pizzas will be made directly inside the hot cast iron pans, so be prepared to set your space to allow for the pan. Use cloths and oven mittens to maneuver pan (it will be very hot). Have your pan on one side, leave space in the middle for shaping the dough and then have toppings ready in the side.
- Take a dough ball and stretch (without breaking the dough) into a circle the size of the cast iron pan. Take the hot cast iron out and set the dough into the pan. Form the crust, then add all of your toppings.
- Note, place the Goat Cheese underneath your Mozerella to avoid it getting dried out during cooking.
- Top the Mozerella with Parmesan, which is will eventually create brown peaks in the melted cheese during the cooking process. Finish cheese by sprinkling dried Oregano, squirts of BBQ sauce and pieces of Spinach to garnish
- Brush the crust with olive oil lightly. Sprinkle small amount of Kosher or Sea salt onto crust and place in oven.
- Cook Pizza until brown peaks form in the cheese and the crust is golden and crispy (about 12-15 minutes). Pull out pizza and transfer to a dry rack. Allow. Pizza to cool for 5 minutes before serving. NOTE: make sure pizza is placed on an elevated dry rack and not on a flat surface. Placing on a flat surface (like a cutting board) causes the bottom to steam itself underneath and won't keep it's crispness.
- Cut pizza and serve. These pieces are far more filling than you expect. Enjoy your new addiction.
